Growing up on a dairy farm instilled in Dianne Ray the passion to dedicate her life to cooking for others. Immersed in what she dubs a “genuine paddock-to-plate” lifestyle from a young age, she was able to combine her childhood experience with her love for the land to carve a career focused on conjuring wholesome, intriguing food. “I always loved having dinner parties at my place. Having the guests and yourself all in the kitchen, really enjoying the food, sharing and embracing something different and discovering new flavours and textures,” Di says. Having been in the hospitality industry for the last 18 years, Di kicked off her career at renowned local catering company Peter Ford before taking the plunge and opening The Shared Table - an eatery that aims to bring people together over interesting food. Opening in 2019, The Shared Table prides itself on sourcing local produce and fresh ingredients - serving dishes that raise awareness about sustainability in the food industry. Local growers and suppliers include Sher Wagyu, Western Plains Pork, Inglenook Dairy, Dama Dama Venison and Millbrook eggs, with Buninyong residents also gifting herbs, fruit and vegetables from their own harvest. “Promoting sustainability is a big part of what we do,” Di says. “We endeavour to be as close to zero waste as possible. Injecting the hotel experience with a commitment to eco-friendly practices is of paramount importance to David and Martin, who understand that true luxury must be founded upon environmental integrity. This commitment is evident through their restoration of an historic building, their recycling of demolished materials, their lush on-site gardens, their paddock-to-plate ethos, and planned installation of solar panels, and also through their partnering with local social enterprise Fifteen Trees which planted 250 trees in order to help offset the impact of the hotel build. We will also commission Fifteen Trees to periodically plant trees to help offset our carbon. These trees will all be planted together in the region, leaving guests a literal gift to return to whensoever their heart desires. Further adding to the hotel’s commitment to sustainability, Vera offers guests the convenience of a dedicated Porsche EV charging station on-site, providing the reassurance that one’s adventurous escape will be seamless and joy-fueled. --- - Published: 2021-06-04 - Modified: 2025-12-14 - URL: https://hotelballarat.com.au/about/ Hotel Vera An homage. Hotel Vera is owned by Ballarat’s David Cook-Doulton and Martin Shew. A tribute to David’s maternal grandmother Vera, the hotel is an all-embracing journey that inspires a change of pace and an immersion into warmth, seclusion and graciousness. With a passion for restoring grand heritage buildings, David and Martin are renowned for their creative prowess, keen eye for style, and deep appreciation for historic architecture. Upon discovering the 19th-century mansion in the heart of Ballarat, the couple immediately took on the challenge of developing a bespoke accommodation offering that would tastefully juxtapose historic elements against a clean, contemporary aesthetic. While the hotel is a celebration of yesterday’s majesty and today’s design, at the heart of the Vera experience lies the virtue of graciousness. From the moment guests arrive through to their day of departure, their stay is managed with the utmost care, attention, thoughtfulness and grace. For David, these were the very qualities embodied by his beloved grandmother. As such, these are the qualities embodied by Vera. ‘‘ There are those rare people who touch our lives in very special ways. They guide us with their love, wisdom and humanity. When I think of love, I see my grandmother’s face, smiling, reaching for an embrace. I want this hotel to embody this unassuming, yet extraordinary woman.
